CHICKEN FETTUCINE ALFREDO
One of my favorite easy and delicious dinners is chicken fettucine alfredo. Which is an extremely long name and makes it seem a lot fancier than it actually is. I get home and pop a piece of chicken in the oven, have about 20 minutes to get settled and then start my pasta. Best eaten in front of your favorite television show (currently: "Parks and Recreation", which I had no idea had a seventh season) in a giant bowl.
For the chicken:
Preheat oven to 375 degrees. In glass pan, add about a tablespoon of butter and season with salt and pepper. Bake for 45 minutes.
For the fettucine, you will need:
1 pound of fettucine noodles
1 stick butter
1 cup heavy cream
2 cups freshly* grated parmesan
*This is not the time for the pre-grated parmesan.
Cook your pasta according to the package directions. In a saucepan over low heat, warm the butter and cream. Season with salt and pepper.
Place half the parmesan in the bottom of a large serving bowl. Pour the butter/cream mixture over the top.
Drain the pasta and immediately pour it into the bowl. Toss a few times, then sprinkle the rest of the parmesan over the top. Toss to combine, thinning with pasta water if necessary.
